Delight your sweet senses with these cookies that are easy to bake!

ALMOND RICOTTA COOKIE

INGREDIENTS

  • 1 cup almond flour
  • 4 tablespoon ricotta cheese 
  • 1 teaspoon baking powder
  • 1 egg
  • 1 cup butter

 

INSTRUCTIONS

  1. Preheat the oven at 350oF.
  2. Whisk together butter and egg. Then add almond flour, baking powder, ricotta cheese, and stevia. Mix thoroughly.
  3. Divide the dough into 12 balls. Place them on a baking tray. Press lightly with your hand.
  4. Bake for 10 to 12 minutes.
  5. Serve.
ALMOND RICOTTA COOKIE

AVOCADO FLOUR-LESS COOKIE

INGREDIENTS 

  • 1 cup coconut flour
  • 1 egg
  • 1⁄4 cup butter
  • 1⁄2 cup stevia
  • 1.5 cup almond flour
  • 1⁄2 cup cocoa powder
  • 1⁄2 cup stevia
  • 1 cup avocado
  • 1 egg
  • 1⁄2 cup shredded coconut
  • 1⁄2 cup stevia
  • 1⁄2 teaspoon baking powder

 

INSTRUCTIONS

  1. Preheat the oven at 350F.
  2. Mash the avocado with a fork. Make a smooth paste.
  3. Now add egg, shredded coconut, stevia, and baking powder. Mix well.
  4. Divide the cookie dough into 8 balls. Place them on a baking tray. Press lightly.
  5. Bake for 10 minutes.
  6. Serve.
AVOCADO-FLOURLESS-COOKIE

COOKIE DOUGH FAT BOMBS

  • Icup almond flour
  • 1⁄4 cup of butter
  • 1⁄4 cup stevia
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1⁄4 cup chocolate chips

 

INSTRUCTIONS

  1. Beat butter with a hand whisk until soft. Add stevia, salt, and vanilla extract, and whisk thoroughly.
  1. Slowly add almond flour and beat. Mix nicely. Add the chocolate chips and fold them carefully. Cover the mix with a cling wrap and put it in the freezer for 20 minutes to firm up a little.
  2. Scoop dough into small balls. Your cookie dough fat bombs are ready.
COOKIE DOUGH FAT BOMBS

VEGAN CHOCOLATE CHIP COOKIES

INGREDIENTS

  • 1⁄4 cup oats powder
  • 1⁄4 cup peanut flour
  • 1⁄4 cup monk fruit sweetener
  • 1⁄4 teaspoon cinnamon powder

 

INSTRUCTIONS

  1. Preheat the oven at 350oF. Place a parchment paper on a baking tray and set aside.
  2. In a large bowl, add oats powder, peanut flour, monk fruit sweetener, cinnamon powder, and kosher salt.
  3. Now add vanilla extract and soy milk. Stir to make a dough. If you think the dough is not moist enough, you can add 1 or 2 tablespoons of soy milk. Stir the chocolate chips.
  4. Make 10 round shape balls from the dough. Place them on the parchment paper. Flatten with the help of your fingers.
  5. Bake for 10 minutes.
  6. Let them cool down for 2 to 5 minutes. Enjoy.
VEGAN CHOCOLATE CHIP COOKIES

COCONUT ESPRESSO COOKIE

INGREDIENTS 

  • 1 cup coconut flour
  • 1 egg
  • 1⁄4 cup butter
  • 1⁄2 cup stevia
  • 1 tablespoon cocoa powder
  • 1⁄2 teaspoon baking powder
  • 2 tablespoons ready espresso

 

INSTRUCTIONS

  1. Preheat the oven at 350F.
  2. Whisk together butter, egg, and espresso. Then add coconut flour, baking powder, cocoa powder, and stevia. Mix thoroughly.
  3. Divide the dough into 12 balls. Place them on a baking tray. Press lightly with your hand.
  4. Bake for 10 to 12 minutes.
  5. Serve.
